Who doesn't love an ice cream sandwich? This yummy alternative is a great treat for kids and adults and it's dairy-free!

- 2-2 1/2 soft bananas
- 2 tbsp. of peanut butter or almond butter (tried both ways and kids loved them)
- 16 graham crackers broken in half (try cinnamon or chocolate)
- Handful of mini chocolate chips (optional)
Instructions:
- Peel and mash bananas in medium bowl
- Add peanut or almond butter
- Mix with spatula until blended
- Add chocolate chips (optional) and stir
- Spoon a dollop of the mix onto half of a graham cracker and place other half on top
- Repeat until ingredients are gone
- Place in freezer for at least 2 hours (Middle will not be mushy when they are ready)
The mashed banana takes on an ice cream consistency when frozen, resulting in a twist on an ordinary ice cream sandwich that everyone will enjoy!
